Nestled in the heart of Vancouver’s Financial District is an urban, Indian-inspired restaurant and cocktail bar – Copper Chimney. A communal space for relaxed social dining, Copper Chimney draws its inspiration from the vibrancy and innovative spirit of modern India. At Copper Chimney, we want to take you on a gastronomical journey through contemporary Indian food and artisanal cocktails.

We have traversed the country to create our distinct seasonal menu, a beautiful amalgamation of the best of British Columbian produce, regional Indian flavors and modern gastronomic techniques.

Our philosophy is that each dish should be an exhibition of the potential that Indian cuisine can be elevated to, with the ultimate aim of evoking new flavors, emotions & ideas.

Our restaurant features two tandoor ovens, as well as a dedicated bread bar to highlight the Goan breads that our Chefs grew up with. The menu incorporates spices, techniques, and includes tandoor roasting to highlight local and seasonal produce.

Designed with social aspects in mind, the menu is divided into multiple sections and ideal for sharing. From the Bacon Naan or Cheese Kulcha, to the Chota (Small), Bada (Large) and Patiala (Extra large) dishes, the menu is designed to allow our guests to share and enjoy their experience in a fun and casual atmosphere.

To compliment our passion in the kitchen is a dynamic cocktail program that celebrates the classics, such as the Tamarind Margarita and Kachumber Cooler, along with new favorites.

Our Team

A lifelong chef whose passion for travel is matched by his love of cooking. Born in New Delhi, Chef David spent his youth travelling and cooking throughout India, cultivating a sophisticated and singular talent in the culinary arts. Seeking to travel further both as a chef and in the world, he moved to Canada in 1998, and ultimately made Vancouver his home in 2000.

He has been with Copper Chimney for 12 years as the unparalleled tandoori chef de cuisine, responsible for preparing otherworldly tandoori dishes that follow his unique culinary philosophy. Balance, lightness, and incredible depth of flavour have come to be recognized as signatures of his profoundly unique style and have earned him enormous respect from chefs and guests alike.
